Its been a long time since I skimmed through it, but if I recall in the World War Z novel, even though the zombies had some crazy non-biological properties that don't make sense, humans could have just holed up and waited for the zombies to decay away in like a year. Unfortunately, cascading societal collapse and wars made it so a zombie outbreak would keep spreading, so the zombie virus kept on getting new batches of people to infect and prolong the outbreakBored thought:
Zombies have, for a while now, abandoned their magical origins, and become much more scientific and biological. Sometimes even called "infected" isntead of zombies, hammering home that these are biological creatures
This has opened up the question of how these organisms manage to keep the zombie apocalypse going without the intelligence to keep up basic health functions like getting food and water. Many of these new zombie apocalypses should reasonably end in about a month when they run out of humans to get regular meals from.

28 Days Later (more specifically its sequel 28 Weeks Later) also touches on this a bit. In that movie, people become infected by a virus that makes them mindlessly rage at anything and everything, and though it's not technically a "zombie" plague, the infected are completely incapable of doing anything but attacking people in blind anger. Since they cannot take care of themselves at all and lack the ability to leave the area they're in any faster than a human on foot can, the survivors just get the heck out of dodge and leave the infected alone, and they start to die out on their own.Bored thought:
